How to: Make Buttermilk

Love cooking with buttermilk but always wondering what to do with that giant quart after you've used your measly 1/2 cup for a recipe? Sure there's pancakes, biscuits, sorbets, ice creams, cakes, pies, icings that can be made but if you don't have the time (or frankly don't want to make all those fatty foods), just use your regular milk and make you own. It's so simple you'll want to laugh out loud.
All the ingredients you need
How to Make Buttermilk
Here's what you need:
A little less than 1 cup of milk
1 Tbl lemon juice- can also use white vinegar
A measuring cup
A citrus juicer

Here's how you make it:
Squeeze out 1 Tbl of lemon juice into the measuring cup. Fill remaining cup with milk. Let sit for 5 minutes or so. Presto. Honest to goodness buttermilk. And if you need more just use those ratios to double.

Old Fashioned Buttermilk
Heavy cream- best from a farmers market

How to make it:
Fill a jar (like a canning jar) half way with cream and shake back and forth. After a few minutes the cream will thicken and turn to whipped cream. Continue shaking until a yellow glob has formed at the top (this is butter) and a liquid below (this is buttermilk- hence the name). Pour buttermilk out of the jar.
