Simple Tomato Pasta



Simple Tomato Pasta

2 large ripe tomatoes- diced
1 c. chopped flat leaf parsley
2 large garlic cloves- minced
1 Tbl. olive oil
1-2 anchovy filet- minced
Pinch of sugar- if needed
Salt and pepper to taste
Brown rice pasta (I like Jovial)

Optional: Tiny pat of butter, grated parmesan, splash of red wine

1. Set a pot of salted water to boil. In a saute pan add the oil and heat over medium. Once the oil is rippling in the pan add the garlic and when you can smell the garlic- only a minute or so- add in the parsley, tomatoes and anchovies. Turn heat to low and let simmer. If using, add in the red wine.

2. When the water comes to a boil, add the pasta and cook until al dente, then drain. Taste the sauce for salt, pepper and sugar, and add in a pat of butter if you are using. Add the pasta in with the sauce and toss it to mix well. Serve and sprinkle parmesan over.

  1. Delicious - my favourite meal of all time. I have lived on pasta and fresh tomato sauce most of my life, and anyone who tells me it is fattening just doesn't know what they are talking about. I'll have to give you my pepper-mushroom sauce that I love to make soon!

  2. Oh yes! And I need the pepper mushroom sauce recipe asap! Matt got really excited about it too, haha.
